Mustard Greens

This is Matt Rodriguez, Horticulture Agent with the North Carolina Cooperative Extension, Burke Center.

Today's program is on Mustard Greens. A great vegetable to plant in Early Fall along with onions, turnips, and radishes. Mustard green is a member of the crucifer family. This family is home to cabbages, kale, and spinach. It is considered a leafy green vegetable that can be eaten as young leaves or older mature leaves. Mustard greens have a hot mustard taste. Hence the name. These greens prefer full sun in well draining soil. It’s best to water mustard in the morning to allow the full day to dry. Like many of the crucifers, it does best in the fall and early spring. Moisture and higher temperatures can influence the flavor and cause spicier and bitter tastes. They can be grown directly or in pots that are at least 4 to 6 inches deep. Like most vegetables they prefer an inch of water per week. 30 to 50 days is the typical Harvest time for Mustard. Harvest size can be determined by your preference.
