Hello, I'm Brandi Silver, FCS agent with the N.C. Cooperative Extension, Burke
Center. Today’s program is all about garlic, a culinary powerhouse with a rich
history. For over 5,000 years, garlic, an herb in the onion family, has been
celebrated for its medicinal and culinary uses. Originating in Asia, garlic has
become a global kitchen staple, prized for its distinctive flavor and potent health
benefits. Recently, its antioxidant properties, which help reduce inflammation and
protect against free radicals, have gained attention. These benefits may lower the
risk of chronic diseases like heart disease and cancer.
Garlic comes in two main types: softneck and hardneck. Softneck garlic, commonly
found in stores, has flexible stems perfect for braiding and a long shelf life,
making it convenient for home cooks. It has a milder flavor compared to hardneck
varieties. Hardneck garlic, known for its robust flavor, produces edible flower
stalks called scapes, which emerge in early summer.
Garlic is a low-acid vegetable, so it requires careful handling to prevent harmful
bacteria like *Clostridium botulinum*. When storing garlic in oil, keep it
refrigerated and use within three weeks to minimize the risk of botulism.
Garlic is a versatile and nutritious addition to both your garden and kitchen.
