This is Matt Rodriguez, horticulture agent with the North Carolina Cooperative Extension, Burke Center.
August is a great time to start planting your cool season crop. It's important to understand that the cool season crops need time to reach maturity prior to the frost date. For our area, some time between August 1st and August 15th. This will work for most of your leafy greens such as Kale, Lettuce, Spinach, and Arugula. Onions and Radishes need to be planted within this time as well.When directly seeding your vegetables, you must be willing to thin out extra seedlings that might germinate. This is particular in carrots as the spacing between carrots is important for their growth. Any plant can be planted from seed, it's just the matter of getting the timing right. We have annual planting/harvesting calendars available online and in our offices. Stop by and pick up a soil testing kit so you have a good idea of what you're working with. I myself will be starting a cool season garden in my raised beds this year, so feel free to call us with any questions.
