Local Food of the Month Recipe Highlight- Watermelon Salsa
Our local produce highlight for July is watermelon! Not only is it great straight from the garden, but it is delicious paired with other produce to create a Watermelon Salsa. Before any preparation, make sure you wash your produce, your hands, and use clean equipment. You will need 3 cups of chopped watermelon, ½ of a yellow onion chopped, ½ of a bell pepper chopped, 1 tablespoon of chopped seeded jalapeno pepper, 2 tablespoons of chopped cilantro, 2 tablespoons of lime juice, and 1 teaspoon of vegetable oil. Once you have chopped all produce items, combine all ingredients in a bowl, stir until well combined, and refrigerate for an hour before serving. This recipe is great for a hot day or even a July 4th celebration! Find watermelon at your local farmers market or purchase directly from a farmer.
