Collapse ▲The N.C. Cooperative Extension joins markets across the country in celebrating National Farmers Market Week from August 7-13, 2022. In the midst of a global pandemic, farmers markets, like all other small businesses, have innovated to continue operations for the farmers and communities that depend on them. Farmers markets foster direct relationships between community members and farmers which can work to create a more fair and sustainable food system. Farmers markets are a hub for connection and collective action around shared values. From set up to break down, there are many moving pieces that make our farmers market ready to serve the community. Farmers Markets Don’t Just Happen! There are farmers markets in Person County, Roxboro, Oxford, and Creedmoor, not to mention many of our farmers go to other surrounding counties to sell their goods. Help celebrate National Farmers Market by visiting one of the markets this Saturday morning.

Parmesan Green Beans – serves 6
3 cups fresh green beans
1 Tbsp oil
1 clove garlic, minced
1 small onion, thinly sliced
1 cup water
1 Tbsp chicken bouillon
¼ cup grated parmesan cheese
¼ tsp black pepper
Wash, trim and cut green beans into 1-inch pieces. Sauté oil, garlic, and onion in a large saucepan until garlic and onions are soft. Add green beans, water and bouillon and stir. Bring to a boil and simmer for 5 minutes, or until beans are crisp-tender. Place in serving bowl. Sprinkle with parmesan cheese and pepper.
